The peptide GPNAV showed weak Angiotensin-Converting Enzyme (ACE) (EC 3.4.15.1) inhibitory activity, ACE inhibition ratio 23.96 ± 4.7% (Value are means ± standard deviation (n = 3−6), control (without peptide, 100%)).

Enzyme(s)/starter culture

Soy meal  was fermented with Bacillus subtilis from Douchi and then was hydrolyzed by thermolysin, and the water extraction was then separated into four fractions using ultrafiltration membranes.
