ACE-inhibitory activity

(1) The peptide LPWFDGM exhibited Angiotensin-Converting Enzyme (ACE) (EC 3.4.15.1) inhibitory activity an IC50 value of 62.26 µM.
(2) Molecular docking analysis indicated that the LPWFDGM was mainly bound to Glu162, Gln281, His353, Lys511, His513, Tyr520, Tyr523 (PDB ID: 1O8A).

Enzymatic hydrolysis

Enzyme(s)/starter culture

Yeast powder was mixed with crude enzyme (derived from B. subtilis) and distilled water at an enzyme/substrate ratio (E/S) of 7000 U/g. The hydrolysis was performed at 55 °C for 5 h.
