Enzymatic hydrolysis

Enzyme(s)/starter culture

An aliquot of purified Tegillarca granosa hemoglobin was mixed with trypsin (Sigma, USA) to a final protease: sample ratio of 1:50 (w/w). After incubation at 37 ℃ for 2 h, ice-cold trichloroacetic acid (TCA) was added into the mixture to a final concentration of 10% to precipitate proteins and released peptides.
