(1) The antioxidative activity of the peptide WV against the peroxidation of linoleic acid was determined in vitro, using the 1,3-diethyl-2-thiobarbituric acid method and the peptide showed 43.3% antioxidative activity. (2) The peptide WV can protect U3-1 cells against τ-BOOH-induced
oxidative stress in vitro. The trypan blue dye exclusion assay was used
to measure cell viability. Cell viability was significantly decreased in
the control (39.2%) and in the sample treated with carnosine (41%)
after τ-BOOH treatment. In contrast, when Trp-Val was added to the
medium, cell viability was significantly increased to 53.8%.
