Antioxidative activity

The DPPH radical scavenging activity of TMP increased in a concentration-dependent manner. At a higher concentration (10 mg/mL), 50% of the DPPH radicals were scavenged. TMP exhibited a dose-dependent scavenging action on DPPH radicals in the range of concentrations studied.

The isolated inhibitory peptide TMP retained ACE inhibitory activity after exposure to different pH values and different temperatures for 2 hours. TMP displayed good thermostability and pH stability.
