Rice protein was hydrolyzed by protease Alcalase for 2 h at 55 ℃ (Alcalase 2.4 L is a food-grade endoprotease from Bacillus licheniformis and the main enzyme component is the serine protease subtilisin A, EC3.4.21.62).
