Kefir was prepared using pasteurized milk cultured with kefir grains that contained the lactic acid bacteria Lactococcus lactis, Lactococcus cremoris, Lactococcus biovar. diacetylactis, Leuconostoc mesenteroides ssp. cremoris, Lactobacillus plantarum, Lactobacillus casei, and the yeast Kluyveromyces marxianus var. fragilis (Torula kefir).
