Enzyme(s)/starter culture

The sodium caseinate substrate (2.5%, wt/vol) and glucose (0.5%, wt/vol) were inoculated with Lactobacillus animalis DPC6134 (1%, wt/vol) and incubated at 37°C for 24 h with mixing at 100 rpm and a constant pH of 7 by addition of 0.1 M NaOH.
