A simulated in vitro gastrointestinal (GI) digestion (Pepsin + Pancreatin) of Korat crossbred breast meat heated at 70 ℃ for 0.5 h (H-0.5) showed the highest ACE inhibitory activity (91.64 ± 1.89%).

  1. The Korat crossbred (KC) chicken is a new breed that is a cross between a male Thai indigenous chicken and a female broiler.

  2. This study confirmed that chicken breast heated at KC/H-0.5 is a source of health-promoting peptides.
