Enzymatic hydrolysis

Enzyme(s)/starter culture

During 5 h of hydrolysis, Alcalase hydrolysates showed the highest degree of hydrolysis (DH) at 15.5%, while the DH values of Flavourzyme and Neutrase hydrolysates were 4.70% and 10.1%, respectively. Alcalase was more effective compared to the other two enzymes.
