ACE-inhibitory activity

(1) The peptide GFWKPGSG exhibited Angiotensin-Converting Enzyme (ACE) (EC 3.4.15.1) inhibitory activity an IC50 value of 36.49 µM.
(2) Molecular docking analysis indicated that the GFWKPGSG was mainly bound to His353, His383, His513, Tyr523 (PDB ID: 1O8A).

Enzymatic hydrolysis

Enzyme(s)/starter culture

Yeast powder was mixed with crude enzyme (derived from B. subtilis) and distilled water at an enzyme/substrate ratio (E/S) of 7000 U/g. The hydrolysis was performed at 55 °C for 5 h.
