Biological/Functional activity & target protein
ACE-inhibitory activity

(1) The peptides RYFPT exhibited poor Angiotensin-Converting Enzyme (ACE) (EC 3.4.15.1) inhibitory activity of 17.47 ± 2.45% at a concentration of 188 μg/mL. Thus, the IC50 values of this peptide was not determined.
(2) Molecular docking analysis indicated that the RYFPT was mainly bound to Gln281, Ala354 (PDB ID: 1O8A).

Enzymatic hydrolysis

Enzyme(s)/starter culture

Yeast powder was mixed with crude enzyme (derived from B. subtilis) and distilled water at an enzyme/substrate ratio (E/S) of 7000 U/g. The hydrolysis was performed at 55 °C for 5 h.
